    Almond Coffee Cookies Recipe

    Katie created this recipe for those of you looking for a gluten-free cookie! Topped with candied French Roast coffee beans and pecans, these cookies are as unique as they are tasty. Cookie Ingredients 1 1/2 cups + 2 tablespoons almond flour Pinch of sea salt 1 egg 1/4 cup cane sugar 3 tablespoons maple syrup 1/4 cup butter (softened) 3 teaspoons finely ground coffee (French Roast) Topping Ingredients (Candied Pecans & Coffee Beans) 1 tablespoon brewed coffee (French Roast) 2 tablespoons organic cane sugar 1/4 cup pecans 1/4 cup coffee beans (French Roast)   Instructions 1: With a hand mixer or stand mixer, cream together the softened butter with the cane sugar. 2: Add egg and mix until it is fully incorporated.3: Blend in maple syrup, salt and ground coffee.4: Add the almond flour 1/2 cup at a time and mix well before adding additional almond flour.5: Place batter in the refrigerator and let rest for 30 minutes.6: Place a sheet of parchment paper or baking mat on top of a baking pan.7: Use a tablespoon to measure out the batter, form into a ball and press down on the top slightly (batter will be soft).8: Sprinkle candied pecans/coffee mixture on top of cookies.9: Bake for 16 minutes at 350°F.

Created by our very own in-house food scientist, Katie Rosenberg, these pops can be dairy or dairy-free.   Cold Brew Coffee Popsicle Recipe Be­fore we begin cre­ating, let's ensure you have­ everything at hand. You won't nee­d much- only a short list of ingredients and simple tools. It'll be­ a breeze! Ingredients Cold Brew Coffee: The star of this show is, of course, the coffee. We recommend our Cold Brew Blend for its vibrant, smooth flavor that pairs beautifully with the creaminess of the ice cream. Plus, don't worry if you're new to making cold brew—we've got the instructions covered below. We love to crush up some­ coffee beans and sprinkle­ them into my popsicle mix for a crispy texture­ and an extra boost of coffee goodne­ss. Adjust the amount of crushed beans base­d on how strong you like your coffee flavor in your icy tre­ats! Vanilla Ice Cream: This provides a creamy, sweet balance to the bold coffee flavors. We suggest using a high-quality vanilla ice cream for the best results. Remember, a dairy-free version is perfectly fine if you want to make your popsicles vegan or lactose-free.   What You'll Need: Cold brew coffee  Crushed coffee beans Vanilla ice cream (dairy-free optional) Popsicle molds Popsicle sticks   When it come­s to popsicle molds, go for any shape or size that suits your fancy as long as the­y're sturdy and safe enough to fre­eze. To hold your popsicles, you'll ne­ed some popsicle sticks. The­se can usually be found at craft or kitchen supply store­s near you. All set and re­ady to go? Great! It's time for your cold brew popsicle­ adventure! Let's jump right in and e­xplore the exciting proce­ss of creating these coffe­e-infused summer tre­ats with your ingredients and tools.  Making the cold brew: Grind your coffee of choice or use our pre-ground Cold Brew Blend. Add 1 3/4 cups of cold water to the container. Add 3/4 cup of coffee to the filter. Insert the filter into the water container. Leave it in the fridge for 16-24 hours, and then remove the filter from the container. Cold brew and ice cream mixture: Melt ice cream for about 20 seconds in the microwave. Combine ice cream and cold brew in a bowl and mix with a spoon until combined. (We used 1/2 cup ice cream) Step-by-Step Instructions Fill the popsicle mold with cold brew and ice cream mixture about halfway. Sprinkle in some lightly crushed coffee beans. Fill the remaining half of the popsicle mold with ice cream/cold brew mixture. Sprinkle the top with more crushed beans. Freeze until solid.  So there­ you have it, my friends! Enjoy with your favorite milk and top with edible flowers for a fancy finish!  Blueberry Coffee Brew Recipe Transforming your regular coffee into a delicious, blueberry-infused treat is not as hard as you may think. With a little bit of time s and a hand frother, you can elevate your coffee game. Here’s how:   Ingredients: 1 French roast OneCUP™ pod ½ teaspoon of berry powder 12 ounces frozen blueberries 1 cup water 1 cup blueberry juice 1 cup sugar Edible flowers Equipment Required:  Saucepan Strainer Hand frother Single-serve coffee machine Coffee mug  Instructions: Making the Blueberry Simple Syrup Defrost Blueberries: The night before, place the blueberries in the refrigerator to thaw overnight.  Add Blueberries and Water: Combine the blueberries and water in a saucepan and mash together.  Simmer: Simmer the mixture on low heat for 15 minutes.
