Fall Fig Balls Recipe: A Delicious Bite for the Autumn Season

Pumpkin spice season is a delightful time of year. The air starts to feel crisp, we pull out our cozy sweaters, and we enjoy the most delicious treats the season has to offer. The delicious fall flavors extend well beyond the iconic pumpkin spice lattes and variations. This tasty treat incorporates delicious, warm spices in an easy, no-bake snack that is garnished with crushed coffee beans.

 This recipe was developed by our house food scientist, Katie Rosenberg. 

Ingredients:

For the Dough:
• 8 small dried figs
• 1/2 cup oats
• 3 tablespoons pumpkin seeds
• 1/4 cup pumpkin puree
• 2 tablespoons pumpkin seed butter
• 1 teaspoon pumpkin pie spice
• Pinch of salt

For the Filling:
• 1/4 cup pumpkin puree
• 1/4 cup vanilla yogurt
• 2 tablespoons brown sugar

For the Garnish:
• Coffee beans crushed

Equipment:

• Food processor
• Measuring cups Measuring spoons
• Stirring spoons
• Mixing bowl
• Microwaveable bowl
• Microwave Cookie sheet
• Parchment paper
• Coffee grinder
• Refrigerator

Instructions:

1. Use a food processor to combine the dough ingredients until they are well mixed. Note: the mixture will feel tacky.

2. Make the filling by stirring together the filling ingredients.

3. Form small little balls by flattening out a piece of dough in your hand. Then, make a small divot in the center. Put a dime-size amount of filling into the center and cover the top with a flat piece of dough. Roll the mixture into a ball.

4. Pour the dark chocolate into a microwaveable bowl and microwave until it is melted.

5. Dip the balls into chocolate on one side.

6. Crush coffee beans with a grinder into a coarse texture.

7. Sprinkle the dipped side with crushed coffee beans.

8. Put the balls on a parchment-covered cookie sheet.

9. Refrigerate for at least one hour or until you are ready to eat them.

• Oats - The oats are the textural star of the show. They are an excellent source of protein, carbohydrates, fiber, antioxidants, and more. They are also known to help lower blood sugar and cholesterol.

• Chocolate - Dark chocolate adds a touch of sweetness and balanced bitterness. It also contributes healthy fats, vitamin B12, and iron.

• Coffee - The coffee bean garnish takes these fall fig balls to the next level. Not only do the beans add a nice crunch and a burst of flavor, they also deliver an energy boost and antioxidants.
