How to Make Chemex Coffee

When you use the pour over method of brewing coffee, the water filters through the grounds more slowly than in traditional methods, picking up more flavor in the process. 

WHAT YOU’LL NEED:

• A Chemex (or comparable pour over maker) 
• Chemex filter
• Scale
• Hot water kettle
• Spoon
• Clean water
• Burr grinder
• Your favorite San Francisco Bay Coffee

STEPS:

1. Start your hot water kettle. Make sure water reaches 212°F or just before the boiling point.

2. Weigh and grind your coffee. Our recommendation for a great Chemex coffee is a ratio of 16 grams of water to 1 gram of coffee. Adjust grind setting on burr grinder to grind slightly finer than medium. For this video, we are using 50 grams of coffee to 500 grams of water. 

3. Prepare your Chemex. Place your filter inside of the Chemex. Pour hot water on the filter to rinse off every part of the paper. Rinsing out your filter will remove the papery taste and warm up the vessel. 

4. Pour in coffee grounds. Pour coffee grounds directly into the center of the Chemex and create a well in the middle of the grounds. This will help make sure all coffee grounds become saturated when pouring the water. 

5. Zero out your scale and use again to measure desired water amounts.

6. Wet all coffee grounds with 100 grams of hot water or 2 grams of water per 1 gram of coffee. Next, stir the wet coffee grounds gently with a spoon to make sure all coffee and water are evenly mixed and wait 30 seconds.  

7. Pour two-thirds of water gently in a circular motion and wait 30 seconds. 

8. Pour all of the remaining hot water gently in a circular motion. After all the water is poured, stir slightly with a spoon. 

9. When the water has fully drained, discard the filter and grounds.
